Day 4 Culinary III

·         Beurre Compose-Butter mixed with one or more ingredients, such as anchovy butter
·         Beurre En Pommade-Softened but not melted butter
·         Beurre Manie-Butter mixed with an equal amount of flour; used to thicken sauces
·         Beurre Noisette-Brown butter; butter that is cooked until colored a light brown
·         Beurrer-To lightly coat a container with butter in order to prevent sticking (2)To add butter to a sauce or dough
·         Biscuit-(1) A small cake or cookie. (2) A specific type of sponge cake
·         Bisque-Type of soup usually made from a shellfish base and thickened
·         Blanc (un)-(1) White (2)A mixture of flour and cold water that is added to acidulated water(usually lemon) to prevent certain foods from discoloring during cooking
·         Blanchir-To blanch (1) To place veggies or meats in cold water and then bring to a boil in order to precook, soften, or remove an excess flavor. (2)To whip sugar and eggs together until light in color. (3) To soak meat in cold water in order to remove excess blood, salt and/or impurities
·         Blondir-To cook in fat in order to color lightly

Dungeness crab is form the pacific. Cook for 20 minutes add salt and white wine
Blue point oyster is from the east coast. Dabopay is from west coast
Malpeque is from the east coast
Minronet – shallots, black pepper, white wine and red wine vinegar more vinegar than wine
Tarragon, Shallots, Garlic, Thyme, Salt and pepper, White wine,        Cayenne, Brandi, Cream, Tomato paste
Way to kill a Lobster:
Cut claws and antennas off and then cut in half, take the stomach off and the liver then put the tamale on a separate plate and add cream to it. Melt butter in a pan and add lobster,    garlic, shallots, tarragon, thyme, and flame it with the Brandi then add the tomato paste and white wine and heavy cream then slow simmers for 12-13 minutes mix tamale and liver with very well then add cream  to it at the end
