Day 17 Culinary III

·         Levure- Yeast
·         Levure Chimique- Baking powder; odorless and flavorless rising agent made from bicarbonate of soda and cream of tartar
·         Liaison- Thickener; element or mixture used to thicken a liquid or sauce
·         Lier-To thicken; to change the constancy of a liquid by adding a roux, starch, egg, flour or beurre manie
·         Marcedoine- A mixture of vegetables or fruit, cut into small cubes
·         Macerer- To macerate; to soak an element in alcohol in order to flavor it
·         Manchonner- To remove the meat that covers the end of a bone, such as a chicken leg or rack of meat, in order to achieve a clean presentation
·         Mandoline-A slicer with several blades, allowing various cuts and thicknesses of fruits and vegetables
·         Mange Trout- Chinese pea pods or snow peas
·         Mariner- To knead

Chuck- Teres Major, Flat Iron, Chuck Eye, Mock Tender, Stew
Short Loin- T-bone, Porterhouse
Strip Serloin- New York Strip
Sirloin- Ball Tip Steak
Bottom Serloin-
Tirangle(leg)- London Broil, Tri Tip
Hanger- Inside of the animal were the spleen hangs on
Dry Aging- Tender+Flavor
Wet Aging- Tender

Tenderloin-230
1 egg yolk Bearnaise Pg 230 LCB
Pommes- Poached at 300 degrees, then again at 375 degrees.
Fleur De Sel- Salt
Artichoke tourney
Tomato- Duxelle
Pommes cocotte- Blanc then sauté

Blanc- Do one per table, cold water, flour mixed, salt and pepper, lemon juice and bring to a boil.
Tomato- Cored and peeled, put in a cheese cloth and re-shapped. Place on top of artichoke, brush with butter and season. Place in oven.
